Interestingly, windscreen and rear window removal (without breaking them) is not as difficult a task as I envisaged.
Rear of the car is fully stripped, next step is to get it on the hoist, have a set of dolly wheels fabbed up and drop the front suspension out, remove the towbar and rear bumper. I think it'll be ready for paint then.

SO I've started work on a dolly to bolt to the chassis in lieu of the crossmember / front suspension while it's getting painted. Let the welding abominations begin.

Dolly is nearly done. Just gotta bolt the wheels on, then bolt to the corona. WIN.

Did more work. Even less parts on the car now. Steering / front suspension / crossmember out. Dolly is bolted on. How the fuck I managed to get that right the first time I will never know.
All that has to come off now is the towbar / rear bumper / all the bits in the engine bay. Then it's go-time.
