If you're willing to spend so much money on a car, surely you could not have to worry about forking out petrol money on it.
Personally, I'd look at an evo/s8 rx7/ GTR of some sort. Much cheaper yet still able to be awesome track cars with minimal modifications. Parts are everywhere and there is a huge support base for all of them

I would personally recommend either a 350z or a Honda s2000.
The s2000 is like a modern 86 but better in everyday and still great to drive every day. The 350z is a fantastic car - beautiful smooth torquey v6 and fantastic balanced handling, plus they're built very well and faily cheap. Both of the above are near the top of the game in value for money.
Elise's are cool, but they're the kind of car you laud but never buy. They take all the good things about an ae86, but also all the bad things, and they're made in britain which is a really bad thing. You'd be paying 40k for a british made go cart with a pissy little toyota motor in it.
Evo 8 are excellent value but still shitsubishi's.

FD RX7 Twin Turbo.
My step-mothers brother has one, relatively stock (apart from 3inch zaust and upped boost and tune). Took me through the hills in it and i almost blew a load. Sounded amazing under full boost and stuch to the road like nothing ive ever felt. chews the petty though.
edit: i also vote JZX100, the VVTI 1JZ-GTE's are fucking awesome engines.
jzx100 is a barge though and hardly a track car. Something to tow the track car there, yeah for sure.
