I dont personally know of any places in syd but to point you in the right direction call up a automotive trimmer.
It can be pretty expensive, call up a few places to get varying quotes.
Depending on the condition of your wheel I can re coat it at a fraction of the price of re trimming it with the added benefit of it not degrading over time like leather normally does. Check the seven suns trimming thread in the forum sponsors section.

I will voucher for Geoff - if you go down that path. Alot cheaper than re leathering & will look sweet.

I sussed out a few places in Sydney to rel -leather/ re colour my wheel, prices I was getting to re leather was $400 - $500 !
