bash a different shape bit into the rounded bolt with a hammer (star shape bit or slightly larger(imperial maybe) allen key.
failing that, drill the head off carefully.

I have some SSR superfin knock-offs. I tried to get one of the allen headed bolts and the dude at the fastener shop said something like, that size head is for x shank diameter and the y shank diameter you need has a bigger head. He was of no help in attaining a replacement bolt and never bothered looking for a replacement elsewhere.
Please tell me you are using quality allen keys and undoing the spanner side, not the allen key side. Sometimes they will load equally on both sides but a swift tap on the spanner side and they should come off easily.

With old bolts - i always get some heat into them - then always attempt to tighten them before loosening them - it usually cracks the 15yr old seal
