Is there much difference between the FD and FC calipers?
I've heard the FD's are apparently lighter, any other advantages? I've also noticed pretty much every one uses FC calipers, is that because they are easier to come by?

Sorry, a bit of a noobas question if you don't mind me adding. What are FC and FD calipers? What do they come out of?

FC series 4 is identical to 5 - except some have mazda cast on, some don't, forget which are which.
FD series 6 is identical to 7 - except SP which have staggered piston sizes, bigger pads and are wider to accomodate larger disks (30mm over 22mm).
FC and FD are similar internally - same piston diameter, use same pads and they have same mounting flange but FD use different backing plates to fit larger diameter disks (296mm over 276mm) the main difference besides external shape is the casting process used which means the FD are lighter and stronger than FC. Even with the FC being ribbed for stiffness (and fins help disipate heat) they flex more under extreme braking (more than a Corolla would ever subject them too :P ) the smoother looking FD are one piece from memory which helps in that regard.

So does that mean they use exactly the same seal rebuild kit, except for the SP version?

s4 doesnt have mazda cast, s5 does. appart from that theyre identical.
using s6-s8 you wouldn't notice any difference conpared to s4-s5 on an ae86. go the s4-s5 just because theyre cheaper

Yeah I was going to go the S5, but I saw a cheap pair of S6 for 85 bucks... But then again... at $85 they could be totally unrebuildable with scratched out bores and pistons.

Even if the bores are scratched, they can probably be sleeved. For me, $85 is worth the risk. You could spend $200 and get ones that need new pistons.
