If you have the cashmoney, do keihin FCR's, or MSR's.
Slide throttles are what you want, most sportbikes have them.
1000cc would be a little bit too big, depending on what other work you're doing to your engine. 750cc is probably better for something with mild cams, high compression etc.
You will need to do the normal things when converting to carb such as modifying a 4k-c dizzy to work, etc etc. It's pretty straightforward, has been covered before.
For ideas on a plenum, cold air would be a plus, as well as limiting the amount of turbulence the air has before entering the runners.
