As boganic as it sounds, I'd love to do Mt Panorama at speed in one of the works E49 Chargers. I fucking <3 that track even at the speed limit in a 111hp Scorpion, so I can imagine how pants-browningly awesome it'd be at speed in something with 340hp, 195/60's and about as much weight over the back as a trayback ute
