i love them. i'v only ever used one. when i drive my mates cars that dont have them they feel terrible.
as for flat vs dished it will depend on your seating position and if/how big your boss kit is

i had a nardi classic. i think it was a 340mm. i wouldnt bother buying new, look for a second hand one for around $100 and see if you like the size and offset then later down the track you can buy a new suede one if thats what your into

i had the newer design in my previous ae86, Nardi deep dish 350mm, i now have a brand new classic 330mm, this comes with a little bit of dish so i think its again a newer design of the remake of the classic.
Just dont get fake Nardis cause they'll break and bend..seriously

Look on yahoo jpn. You can get them from $19. Was going to buy heaps and fix them up and re sell.
Wood rim ones are more popular with older cars, yeah older then 80's I mean, I have a woodrim motolita wheel in my 64 mini, personally I don't think the wooden ones suit ae or ke's
